Indonesian Spiced Soup a la Padang (Soto Padang)

I just want to share this recipe that my friend wrote in her blog called, Viki's Kitchen. I missed her & can't wait to see her again & meet with her new bundle of joy..




Use fresh spices to get one of the most fragrant soto.

Ingredients A:
1.5 lb beef for stew, cut into small cubes
3 liter water
3 lemongrass
1 inch galangal
1 inch ginger
1/2 inch turmeric root
4 kaffir lime leaves
4 cloves
1/2 tsp nutmeg
1/2 tsp cinnamon
1/2 tsp black pepper
juice from 1/2 lime
1 tsp vinegar
about 2 tsp salt
about 1/2 tsp sugar

Ingredients B:
1 tbsp minced garlic
3 tbsp minced shallots

Ingredients C:
rice
1 potato cakes recipe
rice noodle or glass noodle
tomatoes
emping (melinjo crackers)
limes

Direction:
Combine all ingredients A in pot, simmer for at least one hour until beef tender.

Saute minced garlic and minced shallots, add to the soup. Add salt and sugar to taste.

In a bowl, combine all ingredients C. Pour generous amount of soup. Served hot.
