As I promised in my previous posting about sharing SCD recipes, today I would like to share our favorite breakfast recipe, which is Banana Pancake. This banana pancake doesn't need sugar at all, as it's already sweet. But you can always add topping such as homemade yogurt or honey if you wish...
What you need:
3 bananas (in SCD diet, no plaintain bananas allowed & it must be ripe too)
oil or butter (I use a mixture of olive oil & butter)
ground vanilla (optional; I use organic ground vanilla powder from local resource)
What to do:
Peel and put the bananas in a bowl, mash the bananas with a fork. Add one whole egg in the mix, mix throughly. Add a pinch of ground vanilla (optional). Heat the pan in medium-low heat. Add oil/butter in a pan, when the oil/butter ready, scoop small size (about a table spoon) to a pan for each pancake. I normally put three or more pancakes in a pan (depends on the pan size that I use). Enjoy your banana pancakes!
